Throughout my education at both UTRGV and with the UTSA Coordinated Program of Dietetics, I have had the opportunity to work in foodservice management, community nutrition, and clinical nutrition as an intern at a variety of sites to include the Texas Center for Infectious Diseases, PAM Healthy Specialty Hospital, UTHealth South Texas AHEC Program, and UTSA Roadrunner Café. These experiences have allowed me to build upon my nutritional knowledge, improve my patient interactions and communication, and sharpen my medical nutrition skills – all of which have shaped me to become a stronger, well-round dietitian.
I acknowledge the value of providing personalized and multidisciplinary care to clients and patients, given that nutrition is not a “one-size fits all” approach. I believe that individualized treatment that attacks from all different perspectives is essential for improved patient care and sustainable lifestyle changes – a belief that often is not held among dietetic professionals.
