Dr. Chimene Castor, PhD, EdD, RDN, LDN, CHES, FAND, is a respected expert in nutrition, health education, and Food as Medicine. For over 25 years, she has helped people prevent and manage chronic conditions with nutrition strategies that respect culture and support long-term health. Her experience spans clinical care, research, global health, and community work, all aimed at reducing health disparities and empowering people from diverse backgrounds.
As a Registered Dietitian Nutritionist, Dr. Castor focuses on her clients’ needs and uses motivational interviewing to understand their starting point. She helps clients build confidence, set realistic goals, and create plans that fit their lifestyle, culture, and health needs. She encourages active participation and reflection, guiding clients to make small, meaningful changes with support based on the latest research.
In addition to her clinical and academic work, Dr. Castor has co-authored several cookbooks inspired by different cultures, including A Taste of Tanzania, Taste of Wellness, and Complete Nutrition: I Don’t Want Anymore Salad. These books make nutrition science simple and show how it can lead to enjoyable meals. She is passionate about connecting food, culture, and health, and helps people discover how food can support wellness every day.
Beyond her main work, Dr. Castor is dedicated to mentoring, supporting global health, and serving through her faith. She has worked in Africa, the Caribbean, and the United States, helping communities with nutrition education, sustainable food systems, and wellness programs. Her commitment is driven by a desire to serve, empower, and make a positive impact in people’s lives.
