Courtney Ramsey-Coleman, MS, RDN, LDN, is a public health dietitian and equity-driven systems thinker who believes that true nutrition security starts far beyond the plate. Courtney leads innovative, cross-sector initiatives that make healthy, culturally relevant food accessible for all—especially in communities historically marginalized by systemic barriers.
Her work spans from launching statewide platforms like Breastfeed NC, to expanding access to human donor milk, to building capacity for local pantries and preschools through programs like the Healthy Food Access Pantry Training Program and the North Carolina Farm to ECE Connections Map. With a passion for creative problem-solving and a deep respect for community voices, Courtney bridges the gap between high-level policy and everyday impact.
Whether she’s collaborating with farmers, early childhood educators, or clinical teams, Courtney brings a data-informed, human-centered approach to every table. Her work is grounded in the belief that food is a human right, health is shaped by systems, and nutrition care must reflect the lived experiences of the people it’s meant to serve.
In one-on-one patient care, Courtney brings the same compassion and critical thinking to the individual level. She helps patients identify and overcome the deeper barriers to health—whether it’s limited food access, chronic stress, or cultural disconnection from traditional healthcare. Her counseling style is inclusive, empathetic, and practical. By co-creating realistic nutrition plans rooted in a patient’s values, identity, and circumstances, Courtney empowers individuals to make sustainable changes that work in real life. Her ultimate goal: to help every patient feel seen, supported, and equipped to thrive.
