I am a registered dietitian and Associate Professor Emeritus of Nutrition and Dietetics at the University of Idaho and serve as an adjunct professor at the University of Missouri. My career has spanned decades of work in child nutrition, diabetes management, Alzheimer's Disease prevention and healthy aging.
I've published widely in peer-reviewed journals and authored multiple books on chronic disease prevention. My work has been featured in Food and Nutrition Magazine, Today's dietitian and DiabetesCare.net and I've written nutrition columns for three different newspapers. I also delivered a TEDx Talk titled "The Road to 100," highlighting strategies for longevity and health span.
As a passionate advocate for Lifestyle Medicine and plant-forward eating, I strive to live the principles I teach and coach. My husband and I are active supporters our local foodbank and we enjoy hiking, mountain biking, running, skiing and nearly anything that gets us outdoors. My goal is to live well--and celebrate my 100th birthday!
