Hi, I’m Nikki, a Registered Dietitian with more than eight years of experience helping people use nutrition to feel their best — inside and out.
I started my journey with an Associate’s Degree in Culinary Arts and a Bachelor of Science in Culinary Nutrition, where I fell in love with the idea that food can be both nourishing and enjoyable. I went on to complete my Master of Science in Nutrition and Dietetic Internship at Illinois State University, and since then, I’ve been fortunate to work with incredible clients in a variety of settings.
For five years, I've had the absolute privilege of working at the Mayo Clinic, where I've gained extensive experience in clinical nutrition primarily within the bariatric program. I also spent three wonderful years with AM Nutrition Services, supporting clients through one-on-one counseling. Over the years, I’ve helped individuals manage conditions like obesity, diabetes, heart disease, cancer, and transplant recovery — but my favorite part of my work is helping people discover how nutrition can truly improve their quality of life.
My approach is compassionate, kind, and encouraging. I believe in meeting you where you are and helping you make realistic, meaningful changes that fit your lifestyle — because feeling your best shouldn’t be complicated or restrictive.
When I’m not working, you’ll probably find me experimenting with new recipes, crafting, treasure-hunting at thrift stores, or hiking with my husband and our three dogs.

I use motivational interviewing techniques to guide meaningful, lasting behavior changes rather than quick fixes.
