Gaby Cohen is a Miami-based Registered Dietitian Nutritionist who earned her Bachelor’s degree in Dietetics & Nutrition from Florida International University and a Master’s in Nutrition and Health Promotion Entrepreneurship from Simmons University in Boston. She completed one of the nation’s few supervised practice programs specializing in eating disorders, where she trained at Boston Children’s Hospital and Mass General Hospital’s Infant Feeding Clinic, treating conditions such as Failure to Thrive, ARFID, and pediatric feeding challenges.
During her eating disorder training, Gaby had the privilege of being mentored by leading experts in the field, Marci Evans and Lisa Pearl. She has experience working across all levels of care for eating disorders—including residential, partial hospitalization, and intensive outpatient—and brings a warm, collaborative, and client-centered approach to her work.
After personally navigating gut health challenges and a SIBO diagnosis, Gaby pursued advanced training in gastrointestinal nutrition. She now helps clients manage digestive conditions through personalized nutrition and supplement protocols, combining clinical strategies with empathy and lived experience.
In 2020, Gaby became a certified Integrative Nutrition Health Coach through the Institute for Integrative Nutrition. Her practice integrates nutrition, mental health, mindful movement, and family life to support holistic well-being. She has a special passion for working with children and continues to study infant and pediatric feeding to empower parents and caregivers.
Outside of sessions, Gaby enjoys playing tennis, discovering new recipes, and catching Miami sunsets. She believes in each client’s ability to heal and is honored to be part of their journey toward a more joyful and connected relationship with food and self.
