Food and Nutrition History:  Recently diagnosed with Celiac and has been following GF diet but lacked full understanding; hypocaloric intake and encouraged to balance meals and add in appropriate snacks

Adherence/Barriers to Behavioral Goals: Grocery shops infrequently and struggles some with options.

Progress/Barriers towards Goals: Increased understanding of making appropriate substitutions for gluten containing products; using water enhancers such as Liquid IV to increase water intake

Nutrition Intervention: Increase fiber using GF options, noting products that contain at least 3 g of fiber per serving; Increase water intake further aiming for ½ oz per pound of BW daily; include additional high fiber snacks to better balance intake and lessen constipation.

Nutrition Education: Reviewed high fiber gluten free snack options; reviewed additional water enhancers and compared pricing; discussed family options for gluten free intake to lessen workload of making separate meals, encouraging use of GF website sent previously as well as through handout; stressed need to seek out GF products that are certified as Celiac.
